Findings
Eating raw or undercooked shiitake mushrooms can cause a striking skin reaction called flagellate erythema—basically linear red streaks across your body that itch. In this case study, a 61-year-old man developed these streaks within a day of eating raw shiitake, and they cleared up within a week with topical steroids and antihistamines, though the exact reason this happens isn't fully understood.
